Spiced South African Plum Compote Pancakes

Pimp up your pancakes with this delicious compote using juicy South African plums 

INGREDIENTS

Compote:

4 South African Plums 

1 tsp cinnamon 

1/2 tsp ground ginger

1 tsp vanilla extract

1 tbsp maple syrup 

1 tbsp water 

Pancakes:

1 egg 

100g (1 cup) flour

60ml (1/4 cup) milk 

1 tsp cinnamon 

Olive oil

METHOD

Compote:

1. Halve the plums and remove the stones.

2. Put all the ingredients into a saucepan and cook on a low-medium heat, stirring occasionally so nothing sticks to the bottom. 

3. Simmer for about 15 mins.

Pancakes:

1. Mix the ingredients in a bowl and heat a pan with some olive oil over a medium to high heat. cook the pancakes 2-3 at a time depending on the size of your pan. Flip them when you see tiny bubbles start to form. Once cooked on both sides, stack and serve up with your plum compote and a dollop of yoghurt. ENJOY!
