Peach & Nectarine Tray Bake

South African peaches and nectarines give this delicious cake a lovely twist, full of flavour and natural sweetness ad. This @southafricanfruit traybake also light, fluffy & surprisingly refreshing. Why not serve it with tea or even a scoop of ice cream, plus they’re shipped to the UK, helping to reduce the carbon footprint.


YOU’LL NEED

  • 60 ml smooth nut butter

  • 125 g thick vegan yoghurt 

  • 120 ml almond milk

  • 150 ml maple syrup or agave 

  • 2 tsp vanilla extract

  • 2 nectarines

  • 2 peaches 

  • 240 g all purpose flour 

  • 80 g ground almonds

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1½ tsp cinnamon

  • 2 tsp ground ginger

RECIPE

  1. In a large bowl, mix nut butter and vegan yoghurt with a wire whisk until smooth. 

  2. Whisk in almond milk and then agave. 

  3. Finally mix in vanilla extract. 

  4. Add flour, ground almonds, baking powder, baking soda and spices. Mix really well.

  5. Transfer the batter into a baking tin, spread it evenly and decorate with fruit segments. 

  6. Bake for about 30-35 min at 180C until the knife comes out clean.

  7. Glaze the top with agave.
